Challenge

This leading coffee brand approached The SEO Works with a clear objective: to continue to improve its organic visibility whilst also increasing visibility in LLMs such as ChatGPT.

The challenge was twofold. Firstly, to make the client’s website easily understood and referenced by large language models (LLMs) so that it could appear in AI overviews and chatbot responses. Secondly, to measure and attribute this emerging AI-driven traffic - an area where standard analytics tools offered little visibility.

Solution

The SEO Works developed an integrated AI SEO strategy to ensure our client was discoverable across both AI-led and traditional search.

The first stage involved a detailed content audit and intent-mapping exercise. Each product, category, and informational page was restructured into modular content blocks, allowing AI models and search engines to extract specific, well-defined answers. This approach improved the likelihood of content being used in AI overviews or cited within chatbot results.

To strengthen credibility, The SEO Works enhanced E-E-A-T signals across the site. Highlighting product expertise, origin information, and real-world experience through updated copy and recommendations on author attribution. A new café page was also introduced to reinforce physical presence and authenticity.

On a technical level, structured data was reviewed with a strategy to support FAQ schema and product attributes, ensuring compatibility with AI crawlers and answer engines. Internal linking was refined to connect brewing guides, blends, and educational content, helping to build topical authority and user flow.

The campaign also extended beyond on-site optimisation. The SEO Works offered guidance on how to adapt content for visibility in generative contexts. This included optimised alt text on social imagery and identifying community engagement initiatives to increase brand mentions in forums and external content sources.

To measure performance, The SEO Works developed custom tracking to isolate traffic from AI chatbots such as ChatGPT, Copilot, and Gemini. This allowed engagement, conversions, and ecommerce revenue to be segmented and reported alongside traditional organic metrics for the first time.

Results

Within twelve months, AI referrals had grown from a small starting point to a consistent and measurable traffic source. Engagement rates for these sessions averaged 91%, demonstrating that users arriving from AI tools were highly qualified and motivated.

AI-assisted conversions increased by 36.5% year on year, with huge growth in exploratory on site actions such as +182% in site searches and +247% in product quiz completions.

Product analysis revealed that AI users tended to purchase higher-value items, including espresso machines, gift subscriptions, and brewing accessories. The client’s signature blend became the top selling AI-attributed product, achieving a 900% year on year increase in sales.
